The fish is fresh and they are unique. I didn't use any soy sauce and I feel they marinated some of the fish too much. They have more exotic fish than other nearby sushi restaurants.
Japanese chef, good quality fresh fish with some premium selections like live sweet shrimp and Japanese uni. yet the pricing is pretty budget friendly compared to restaurants with the same quality. They also offer some limited time fresh selections like this time I had the live jumbo scallop sashimi, it was very good. Lots of choices on small Japanese appetizers as well so you can also treat it like an Izakaya. Definitely will come back, highly recommended
like most restaurants/establishments, being a regular can be extremely helpful. definitely worth trying a few times to concur. reservations recommended especially for their omakase. similar to all nearby japanese restaurants that are GOOD, having patience during weekends or prime time --which tends to be from 6pm-730pm, can be rewarding.
I believe I no good sushi. My favorite was Naras 20 plus years ago. I go to Ojiya once a week and have recently been visiting Kyala. If u want high quality sushi and pretty good Japanese food I recommend you give it a try. You will not find many Japanese owned Sushi restaurants anymore with a Japanese sushi chef. Service is great when they aren't to busy, but when they are busy it should be expected. Prices are reasonable and always a very welcoming environment

The roll was perfection. The best dragon roll I've had.
The miso soup was a whole mood! It was rich and salty, the seaweed was chewy and the tofu texture was amazing.
The meals had a beautiful presentation and they provided utensils, sauces, and condiments.

這間開設在南加州 鑽石吧 Diamond Bar 由日籍主廚一家人經營的 壽司 Sushi & 日本料理餐廳 Japanese Cuisine 是間開業三十年的老店， 2019 疫情後重開堂食時再度出現自己的美食雷達內，雖然附近雖也有許多出色美味的日本料理餐廳，但這樣帶有溫馨家庭式氣氛且仍維持適中價位的就比較少。受到疫情影響自己直到 2022 年中才鼓足勇氣，踏出攜家帶眷在室內覓食的這一步，就決定造訪這間離家不遠卻尚未探訪的餐廳來重溫那曾在各地探店以舌尖紀錄的美國生活。
當時對在餐廳室內用餐是滿懷期待也有提心吊膽，畢竟疫情仍未平息，但在推開餐廳門口看到玄關擺設著日系精巧溫馨的擺設裝飾時，原本緊張兮兮的心情轉為更多對美食的期待。
店內的空間不大但裝飾的精巧細膩，在午餐時段剛開門時入座還沒有太多的顧客，避開巔峰的用餐時段是在疫情當下進行外食的一個要點。牆上黑板上手寫多種每日特選食材與主廚推薦菜色，是一個自己造訪日本料理餐廳時會特別觀察的部份。
這一份是透過專業印刷護貝的菜單，包括大部分的菜色內容，從傳統日本定食套餐到多種壽司捲或魚生料理，同時迎合亞裔飲食習慣與美國當地口味。這種家庭式的餐廳，在菜單上也通常會有這種看似自行排版製作的菜單，看著有些粗糙但也提供了更多的圖片與菜品介紹，可以點小圖放大看詳細內容。
久違的外食又是自己最喜歡的日本料理，壽司與生食自然是專攻的內容，這張是壽司與生食前菜的菜單，可以看到在食材魚種的部份還是相當豐富的。另外店家也有提供主廚推薦套餐 Omakase，包括多種前菜配菜與握壽司的內容且價格適中，是之後再訪的要點。
午間套餐附上的沙拉與味增湯，味噌湯有著柔和但充足的香氣，沙拉的醬料也是清爽有味，舒爽地打開味蕾。
照燒鮭魚點給家中小小孩吃，醬汁有點多且鮭魚本身烤的比較乾，但整體口味還行孩子吃得挺開心的，附上一小碗的烤蔬菜也是不賴的點綴。加州捲與朝燒鮭魚是午餐套餐的內容，也是點給小小孩來吃的，吃了幾塊還不錯，除了用料夠多風味足，米粒本身的口感也是恰到好處。
日式作法的紅燒雕魚頭，以糖及醬油的調味為主，魚肉烹煮後保有細緻的口感，也加入豆腐等配菜，整體吃來鹹甜鹹甜透著鮮味，感覺是挺適合搭配清酒的一道料理。
綜合的壽司拼盤，選用了多種常見的魚生食材，握壽司報括白鮪魚、鮪魚赤身、鰤魚、鮭魚、鯛魚、大蝦、鰻魚、多春魚卵軍艦捲，以及鮪魚鐵火捲。
來自日式職人師傅捏製的壽司，外觀形狀上是水準之上，米飯與食材在送入口咀嚼後完美融合，鮪魚赤肉的酸爽、鰤魚與鮭魚的油脂香氣、鯛魚緊緻的口感與淡雅香氣等，各種甜味與香味在味蕾上盡情奔放。
壽司組合的內容讓人吃來眉開眼笑，接下來的單點內容更是讓人吃得心花怒放，特別是在許久未曾外食後，口感水潤的北海道干貝與柚子胡椒譜出那股酸香甘甜的美妙，是落在心頭上的美好節拍。
一般鐵火捲都是米比料多，但這裡的鐵火捲著實讓我這個經常會點用鐵火捲的食客留下深刻的印象，不僅是鮪魚部份料多味美，油脂的香甜與赤身的酸爽一起在米飯溫柔香甜的呵護下，入口後那種吃到好吃食物體驗的美好喜悅久久不散。
小鰭魚是道地日本餐廳才會使用的魚生食材，只用鹽巴和醋酸來激發出魚肉本身的滋味，少許薑末讓奔放的魚香有著更溫順的入口感受，又是一道水準之作。
厚實切片經過灼烤的比目魚鰭邊肉是一道香氣十足的握壽司，如果可以的話趁著還有些許熱度時入口是最佳時機，但也建議在吃後多喝幾口茶，避免接下來的其它壽司也染上這濃郁的魚油香氣。
久違的高品質生食甜蝦，一份雖然只有一隻但具有彈性的肉質與由海洋孕育的鮮甜，還是值得一試的，油炸的蝦頭更是下酒的好料，香酥可口。
鮪魚中腹肉的甜度與香氣沒有大腹肉或是臉頰肉那般澎湃，但在油脂中更多了一些酸爽的氣味，換換口味也是讓人吃得笑容滿面的。
肉質彈性十足、鮮味出色的象拔蚌在各種料理中都是炙手可熱的食材，以生食的方式享用口感最為鮮明，咬在口中卡滋卡滋相當過癮。
帶魚是當日特別推薦的食材，之前也不常遇到，類似鯛魚的緊緻口感中又多了一份銀皮魚類肉質細滑的口感，相當特別。
竹夾魚也是評斷一家日本料理水準的關鍵食材，稍有鮮度流失油脂的鮮甜就會轉為腥味，但喜歡吃魚的朋友仍是不可錯過，在這裡吃到的是讓人滿意的風味。
水章魚也是水準以上的餐廳才會準備的食材，生鮮吃法的軟Q口感與煮過的軟韌口感截然不同，個人偏好前者，撒少許鹽擠點檸檬汁提鮮或是沾上少許醬油都十分美味。
透過斷面的紋路判斷，這裡的煎蛋壽司應該是廚師在廚房火爐上以平底鍋慢慢煎烤翻面製作的，帶有甜度的蛋香與高湯香，原本是點給小朋友吃的但內心是想把兩個都吞下肚的。
塑膠餐具是店家為小朋友的貼心準備，在點菜與送餐的過程中也可以感受到來自日式服務的細膩，整餐飯吃來不僅是透過美食滋潤了一疫情乾涸許久的探訪美食心情，也讓人更加期待再訪時來品嚐主廚 Omakase 的手藝。
許久未有的室內用餐、許久未嘗的生鮮美味，受到疫情打亂的生活節奏與品質正一點一滴地回到正軌，不僅是要更加把握當下的美好，也讓人對未來充滿期待。
